Fruit Cake



This fruit cake was for Adi's birthday, my inlaw, my sister's husband. He is a young, patient and kind man, I do like him a lot. So, here's a present from all of us.
I used a recipe from a friend of mine, Cindy with a little modification.
Here's the recipe :

For sponge cake : for round pan 20 cm
3 eggs
90 gr sugar
40 gr low protein flour
20 gr milk
10 gr maizena
20 gr melted butter

Kirsch Syrup : Mix together
50 cc glucose
15 cc kirsch (or rhum or any liquor if you may use it)

Chantily Cream: you can use as fillings or cream to cover the cake as decoration.
350 cc cream, whipped
35 gr castor sugar.

Then mix fruit hulled and sliced for filling (i used peach) and decorating.

Directions:
- Beat together eggs and sugar till pale and thick
- Add in the flour, followed by milk and melted butter.
- Bak in 180C, for 25minutes

Presentation:
After the cake cooled down, cut into 3 layers. Brush each layer with kirsch syrup. Spread onethird (1/3) of the chantily cream and hulled mix fruit, repeat layering process. Finishning with the left over chantily cream.

To make the fruit beautiful, spread a little bit gellatine above, so the fruit will keep shining.
