Klapertaart

I have ever once eaten this kind of cake. Not a type of cake used tobe which is spongy, and flour taste. It's different !
This cake could be considered as a traditional cake or oldies cake, you may mention it. Came from Manado, one of Indonesia territories, north part of an island named Celebes. Made from mixed up between milk, bread ( sometimes replaced with flour), eggs and of course coconut meat.
All the ingredients will give you a taste of creamy from the milk, eggs and bread also crunchy at the sametime when you bite the coconut meat.
Don't forget the liquour, I always love the liquor smell, you could use rhum, so the liquor won't be too heavy to consume.

This is the recipe from Yasa Boga
Ingredients :
1 cup coconut meat
50 gr flour
25 gr maizena
25 gr margarine
150 gr castor sugar
6 yolk of eggs
6 glair of eggs
400 cc UHT milk
200 cc coconut water
3/4 tsp salt
1/2 tsp vanilla powder
50 gr raisins

Directions:
- Beat together yolk, castor sugar, salt and vanilla powder till pale and thick.
- Add in margarine which had been beaten with fork till soft.
- Then add in the coconut milk, mix well together.
- Pour coconut water & milk and stir slowly.
- Beat the glair till it stark then add into the dough. Pour the dough into a pan or alluminium foil which had been spreaded with margarine before.
- Bake 150C in about 30 minutes.
